Los Siete Misterios is a Mexican company founded in 2010 with a single ideal: to rescue the tradition of mezcal, while stimulating the micro-economies and promoting the rural cultures producing mezcal.
That is how we link the past to the present and find it again, combining the best of both worlds, we respect pure mezcal, genuine Mexican heritage essence.
Inspired by the legends and mysteries of Mexico, our land, we decided to begin a search for a drink that faithfully represents the customs, culture and the passion they have for their products.
Mezcal Los Siete Misterios is the result of this search. Los Siete Misterios produce a range of single varietal mezcals from agaves that are harvested between 7 to 9 years of age, and roasted in a pit over a wood fire. After roasting and a 72 hour rest, the pinas are removed and ground using the horse-drawn mill, and then fermented in wooden vats for the period of 2-3 days. The mash is then distilled in copper and clay stills. All the expressions are released in very limited quantities, and hand numbered bottles.
Los Siete Misterios Pechuga Mezcal Joven is a cult spirit, it’s elaboración is highly pricey and it’s also considered some sort of ritual for the Maestros Mezcaleros, this is why is only produced for holidays or important dates such as: Semana Santa, Christmas, and Dia de Muertos. This mezcal is made in super small batches in Santiago Matatlan, unlike most other Los Siete Misterios mezcals, which come from Sola de Vega.
To obtain this mezcal, it is distilled three times, in the neck of the alambique still we place 2 turkey breasts and inside the pot we put the mezcal and different seasonal fruits and spices, this varies from one mezcalero recipe to another. Once everything is ready, we start the process of distillation where vapors start cooking the turkey and start mixing it with the flavor of the seasonal fruits and spices and off course the mezcal.
Each mezcal de pechuga is unique due to each maestro mezcalero has its own recipe, this is why we decided to share this tradition in a yearly special edition limited to 168 bottles for 2014. Bottled at 47% alc/vol.

AGAVE:
Our agaves are 100% Espadín, grown for 8-9 years in Oaxaca, Mexico
SLOW COOKING:
Casamigos Mezcal is made using the traditional method. Once harvested, the piñas are split and laid to cook for 4–6 days in six-ton earthen pits lined with volcanic rock.
CRUSHING:
Piñas are cooled for 24 hours before the crushing process begins. The agave is crushed, in the traditional method, one ton at a time by a horse-drawn tahona wheel.
FERMENTATION:
Depending on the season, Casamigos Mezcal ferments for 2–8 days before being distilled in covered copper pot stills. Casamigos is twice-distilled.
COLOR: Crystal Clear
AROMA: Fragrant herbal and fruit, with hints of smoke.
FLAVOR: Notes of smoke and black pepper lead to long silky finish.
RESTS: Up to 2 months.
HERITAGE: Produced in Oaxaca by a 4th generation family of Mezcaleros.
